When available and in season, some guests are lucky enough to enjoy sea urchin caught fresh off the coast in Favignana. Our fishing boat appears to be floating on air, but is really in the crystal clear waters of Favignana, Sicily Our guests are treated to some local seafood delicacies, seaside near the hotel. Truly an immersive experience! The Blue Grotto of Capri has nothing on the amazing grottoes of Marettimo, Sicily.  Truly amazing and spectacular. The historic Florio Tuna Cannery in Favignana harbor is truly fascinating to see how the locals lived off the sea! At Macelleria Campo in Valderice, we have an amazing time making fresh sausages and having a fantastic lunch there! We make these popular and delicious Sicilian Almond Cookies fresh from scratch during our Favignana cooking classes! Fresh Sicilian tomatoes! We use exclusively in this delicious Busiate pasta dish made from scratch in cooking class Busiate pasta, a spring-like pasta is a Sicilian version of the more commonly known fusilli pasta. Sometimes the fish are biting early, so we head out with the crew and set the lines for our fishing trip in Favignana. Not all Italian cooking happens indoors. In Sicily, a lot of great cooking happens outside on the grill. Actually, they really did the leg-work and harvested the fiore di sale that you see in the photo. We take the salt home. Before we get our boots to harvest the salt, we tour the museum and learn the history of the amazing "saline" As we wait for the sunrise on our fishing boat, we relax on the calm seas in Favignana, Sicily on our cookery vacations
